Although most FC's that race in restricted classes where 15x7's are required need to use stock brakes. I still think that brakes to fit under 15's is a good idea, as that gives you the ability to run smaller tires for the height and gearing advantage. Even 16's is good, and if you're wanting big slicks, then that's a great size, as there's lots of GT2 slicks in 16" sizes.

Something like an 11.75"x1.25" wilwood rotor would give lots of cooling ability and might be able to fit under some 15" wheels, and should fit under almost any 16" wheel. Maybe something slightly smaller in diameter would be needed to get under 15's, but the width is a huge part to making them run cool. On the GT3 BMW that I crewed for the owner upgraded to such a setup (it may have been more like 11" rotors, but very wide ones, I don't know the exact specs) and was very happy with it. We didn't need to use the brake ducts any more with it either. Keeping them smaller gives less weight and a lower moment of inertia for better handling and acceleration. It's also less likely to screw with the balance too badly if they're closer to stock diameter.
