Drag wheels are a VERY BAD IDEA. They cannot take the cornering loads and will break on you.
I didn't notice the 4, I thought 5 lug. I think you should go for a 5 lug swap anyway, you get the bigger brakes, and if you stick with the single piston front and solid rear brakes you don't get any extra points according to NASA, since that was the base model brakes for the S5's, right?

I alread have 225/50/R15 Kuhmo V710's I previously used on my VW, but the Kosei K1's I had them on won't fit the RX-7.

Local auto parts store. They're Mr.Gasket I think. You can get that sort of thing from Summit Racing. They leave enough room for all the driving I've done with them, after all it's still just an 8" wide wheel, a 225 wide tire and a 29mm offset.
1/2" is only about 2mm more, for about 27mm offset (assuming you're talking about the Rotas with 40mm offset), which will still be within the confines of the fenders.

Indeed. I looked far and wide for some to use as track wheels and the Rotas are all that I came up with that's half decent. It's not even that easy to find 15x7's in our bolt pattern. It's great for 17" and bigger wheels, but the small stuff all seems to be 4 lug.
A 14mm offset in the rear will be very close to the fenders, but it should be workable.
