EGT Probe placement

EGT Probe placement
I've read that the best place to put the EGT probe is as close to exhaust ports as possible.
The turbo I have had a hole tapped for the EGT probe in the exhaust housing just above the flange that meets the turbo manifold. I told the shop to use that hole, but for what ever reason, they filled that hole in and mounted the probe in my down pipe.
Now I havn't had the car tuned just yet, but I've got a base map in my E6K and I've taken the car around my area just to make sure she still starts and what not and I've noticed that the EGT is really slow to respond. Now I'll be the first to say that I don't know all that much about EGT gauges. Are they supposed to stay at a constant level like a water or oil temp gauge while the car is at idle and then react as boost and throttle are applied.
Basically what I'm getting at is will it be ok to leave the probe where it is as long as I know where the temp should be to be safe. Not sure if I really worded that right or not, but any help would be great.
BTW its a Greddy electronic EGT gauge if that makes any difference.
