I'm still pretty new with working with cars since no other car has really given me any mechanical issues like the FC, but I know this sounds silly, but what's an easy way to fix an oil pan gasket leak?

There is no easy way. You have to replace the gasket, which means suspending the engine so you can remove the bolts for the passenger-side engine mount. There are 3 that go up into the center iron through the oil pan. Remove all of the small bolts around the edges, replace the gasket, and then put all the bolts back in.

so I'm going to have to get a cherry picker to suspend the engine & remove the bolts from the oil pan, seems a bit much just to replace a gasket. is there's any more info or a write up about it? that could really help.

yea lucky on my 300zx i have to losses the whole front suspension and drop the rack and pinion and remove starter, tranny brackets, steering column and drop the crossmember.. im stuck on my project... starter bolt broke and wont come out now...entire project stopped. lucky all u have to do is that, i have to lift my engine almost 4 inches... good luck

Yeah, you actually could jack it up from the transmission bell-housing on an FC coupe. On my convertible I don't have that luxury (extra crossmember blocks it), so the cherry picker would be the way I'd go. Hopefully there would also still be enough clearance to get the pan out with a jack in the way underneath.
