I don't think it'd be too hard. I've let my car sit for over a year and it started just fine, it may flood a little. if that happens pinch off the fuel lines, pull the spark plugs and turn it over for a bit. It should blow the fuel out the plug holes and you'll be good to go.

Read through the FAQs in the 1st gen tech section. Hopefully the intake was covered during this time to prevent 'stuff' from getting into the engine. Carb will most likely need rebuilt and the entire fuel system cleaned, fluids/filters changed, etc.. The following links should help get you started.

Not ATF, use Seafoam instead. Rotaries love Seafoam. Drain the gas out of the tank, change the fuel filter, mount the carb, dump a couple ounces of Seafoam down the carb, put the rest in the tank with a few gallons of FRESH GAS, then start her up....

what about putting a little oil in the intake to get the seals up to par, or is that unnecessary

Seafoam will do the same thing, help build compression, while also softening and removing carbon.
