Outline the selection then once you have that all done ( i assume you know all about the slection tools and how to add and subtract from a selection, Then go to image>adjustments>hue/saturation.
You can also adjust the color balance and brightness and contrast to get the colors to look right.
He did a quickie job above that is why the other colors are affected...
