Nobody is answering the why part!
I have used Castrol 10-30(winter) and 20-50(summer) for the past three years. That's basically all I have ever used in any of my cars.
I recently started tracking my car, so I switched to Mobil1 Syn 10-30, just for a little peace of mind.
PureOne filters. They are the best filter that purolator makes and I have had good luck with them. They have recieved good reviews too.
NGK plugs (9's) because they are relatively cheap and readily available.
I am in need of a new set of plug wires and don't know what I'm going to go with yet.

oil: Mobil 1 10w30 or 5w30 -- better for turbos and for track use
oil filter: Mazda OEM -- good quality and is inexpensive, FRAM filters suck
spark plugs: NGK OEM plugs, trailing (9 heat range) for all four -- inexpensive and they work, use all 9s for better resistance to detonation and for durability
spark plug wires: NGK OEM -- they work fine, don't see a reason to change

Oil: Chevron 10w30, bought by the case at Costco, because it's good and cheap to change it out every 1000 miles.
Filter: Purolator PureOne oil filter, because it's better than anything else you can buy at auto parts stores excepting maybe the MobilOne filters, and at the very least equal to OEM quality but at a better price (many OEM filters are made by Purolator, including certain Mazda models).
Wires: haven't changed these yet, will probably go with NGK because I've used them before and never had problems. Don't know if they're any better or worse than others though.
Plugs: I'm trying the BR _ EIX plugs, 8's and 9's, have had them on for about 500-700 miles now. These are the iridium ones built for sportbikes, supposedly RX-7 people have had luck with them. My reason for trying them is because I know that a lot of engineering goes into motorcycle engines, and I'd like to see if their solutions work well for our cars also. Plus they're cheaper than specialty platinum or iridium plugs for rotaries.

Mobil1 oil -just because I like it.
Mobil1 oil filter -harder to crush than other filters, and only makes sense w/ the oil
NGK plugs, only plugs I've never had a problem with (other than denso) but I just keep buying them

oil - Castrol GTX 10W30 most of the year, 10W40 in July/August, I use Mobil 1 in my Mustang which I do oil changes in every 5000 miles, I'd go broke if I did the same in my RX-7
filter - To be honest it's usually whatever the auto parts store has in stock. I've had Mobile 1, Purolator, Nippon OEM, Bosch, and even the dreaded FRAM in my car. Did go through a time when I only used the OEM filters, but I change the oil so frequently (every 2k miles) that I don't think the filter matters all that much
wires - Taylor Vertex Spiro Pro, originally bought Magnacore wires, bug they really didn't look all that different than stock, the Spiro Pro's seem to have a better boot design than any wire set out there
plug - NGK, I was using the platinum ones, but I'm trying the non this year. My car's got few mods, so I'm still going 7/9, but I'm thinking about trying 8/9, has anybody tried the NGK 8 plugs?

Royal Purple because it is the only oil proven to raise power in a rotary (according to racing beat)
BRISK plugs - Everyone uses NGK stock but how do they know they are the best without trying or even looking in to something different? See my site for more details.
Taylor, Accell or NGK wires because those are the brands that have been proven to work consistently without any issues reported by people on forums like this.
Mazda stock or pureolator oil filters but generally anything but FRAM because they suck.

Castrol 10W-30 oil
Purolator Pure-One oil filters (Well made and has the anti-drain valve; I do use a larger non-stock size though)
stock NGK plugs (Stock motor. Why do I need different plugs?)
stock NGK plug wires (They fit right and work well. Why do I need different wires?)
I don't change or mod for the sake of being different. I change or mod for increases in performance.

Castrol 10w-30 because one of my favorite cars is the castrol RX-7... Fram filter, cuz it comes with a special grip at the end. Oem spark plug and wires, the rx-7 ignition setup is already a superior one to begin with.
