What are the syptoms of an engine that got too hot?
The guy I sold my FD to overheated it. He says the gauge got into the red. He stopped added water and ran fine on restart.
He let it cool and could not get it to start again.
Isn't this a symptom of an overheated motor?
I've read posts saying the plugs should be replaced?

Tell the guy to pull the plugs and see if they have coolant on them. If he's pushing water to the overflow jug when running an not sucking it back in once cooled, it's probably an o-ring in this case. It could be a bad pressure cap or leak. At that point you need to do a cooling system pressure test when car is cold to find leaks. It may have to sit with pressure on the system for a while (could be hours) and if you see no leaks it's an o-ring. At that point turn the motor over by hand (use a 24mm wrench on the alternator nut with trans in neutral) then pull plugs from both rotors to see if they are wet with coolant. I kow all to well because I've just recently experienced it.

He needs to get it started, but can't. He did restart it once after it overheated after he added water.
He got it home, let it cool and now it will not start. It turns over he says, but won't fire up.

Did you try what I said above? It probably won't start because the spark plugs are wet with coolant. He needs a pressure test to give the final answer if no coolant on the plugs. I doubt he lost compression. With mine flooded the motor would turn over all day but not start. See my post above and others in the archive.
