Running the heater with the cabin fan on makes a small but noticeable difference in water temp. When at the track I run the heater full blast out the floor vents. With the windows down it doesn't actually get hot in the car as long as you're moving at high speed
Running the heater in the past has been the difference for me in keeping temps from spiking on several occasions. It helps. It doesn't really bring temps down but it adds more thermal capacity to the system. Temps don't continue to climb as high as they would without the heater on. It probably has no impact in just street driving though.

My old E21 BMW, which probably had a clogging radiator, used to ping around town on hot days. This meant it's time to smack the dashboard to un-stick the temp gauge needle (and every other gauge). If it jumped past the 3/4 mark, running the heater full blast would get rid of the pinging.
