You can buy a smaller steering wheel and a Mazdaspeed hub adapter and it will be a little more "roomy" around the knees. One problem is if you are buying a touring, the sunroof takes a lot of headroom the Base and R1 do not have this problem.

Well, I'm not 6'4", but I do have long legs which give me a similar problem. There are some ways around it if you want to spend the money. Here are some suggestions:
1. Get a smaller aftermarket steering wheel. My car is basically a streetable track car. So, it's streetable, but I really don't drive it on the street so I will be using a 320mm steering wheel. That's pretty small by today's standards but it will help give me the clearance I want/need.
2. You have two choices here:
a. Use a spacer to move the wheel closer to your chest, thus freeing up knee room
b. Use a quick release adapter which will also act as a spacer
I will be using 'B' myself. Being able to remove the steering wheel will make the entry a lot more pleasant while having the added benefit of acting as a spacer at the same time.
Now, those will at least get you some leg room. If you need head room as well, you'll have to look into an aftermarket seat to drop you down a little closer to the floorboard.
Good luck!
