You have to buy a PC interface for your standalone or buy a standalone that comes standard with it. The dataloggit system for the PFC is one of these interfaces. I really dont know much but theres a start for you. Sorry, I'm running a pettit.

There's tons more info on the Datalogit on that page.
I don't think it does virtual gauges, but it does datalog, which is mighty handy.

ho boy... Okay, couple of things here:
First of all, since you have a pfc, have you considered just getting the commander? (based on your questions, I'm assuming you don't have one). It's a simple hand-held device that plugs into the pfc and can moniter virtually all the sensors in the car. Plus, you'll have limited access to change some settings in the pfc.
The datalogit system is primarily used for programming/tuning the pfc and logging the data. Although, if can also be used for monitoring. Datalogit is basically the only system that is currently on the market that can interact with the pfc. Keep in mind, it costs ~$350, and it's usually on a very long backorder.

You can have it show you AFR's, RPM's, temps, etc. The watches at basic digial numbers in boxes that you can format, text size, color, position and font(I think). I have them formatted to show 1" tall characters so that I can see them while driving.
