Where is the best place to splice in to get switched power for accessories?

Engine bay: check connector near the battery or the AAS connectors near the shock towers.

Interior: AAS connectors at either shock tower or in rear tire well, P/S/cruise control/stock alarm brain.

I'm rewiring my accessories and I want to do it the right way.
So, radio, aftermarket gauges, etc.
What I'd really like is to setup a ?patch bay? where I can add different accessories.

Use a relay.
Pull 12v direct from the battery to the power feed of the relay.
Trigger the relay with a signal from the ignition switch.

That way you have a switched 12v that isn't pulling any power through the ign. wiring (except for the minimal amount to switch the relay on).

That is the best solution I have heard of!
..(marks thread for future "modification to car")

If more than 1 accessory wire hookup is needed, what is normally done? A relay for each wire?

Depends on the current draw you plan on seeing.
Typically, I'd expect one relay to handle most accessories you might add.
What are you adding?

Nothing crazy, just trying to make sure I'm setting it up right.

relay should hold about 30 amps(some are rated higher),so really unless you are running hydroponics in your rear hatch you are OK!

You can also use an add a fuse into the unused fuse box areas. Depending on your car these are Power steering, Power windows, Sunroof, and Rear wiper for an S4 coupe. Check the FAQ for the other series.
