My goal is to fully restore my RX-7 while making modifications that will put its performance loosely in the range of the RX-8. My next big step is to upgrade the aging suspension. My RX-7 is my "sunny day" car and sees the occasional track or autocross day just for fun.

I like the idea.

I voted to build a "performance street car."
Basically I want my car to go fast, be reliable enough for me to daily-drive if I want, and auto-x competitively (that's more me than RX-7!).
I want to learn a gigaton in the process.
Someday I'd like to build a fully dedicated track car, but I don't think that will happen with my current FC.
