Hi I'm new to this. I have a question. This may sound stupid and probably is but what is the difference between the GS or GX-7 versions of RX7. What engine do each ones have and what engine does a convertible have?

The S, GS, GSL, and GSL-SE are 1st generation RX-7 trims (1979-1985).
The 2nd generation started in 1986 and unfortunately did not consistently conform to such a nice little letter system to identify the trim packages. Pretty much every year was a little different. There is a sticky at the top of this group which explains the trims, year by year.
No such thing as a "GX-7". You might be thinking GXL.
The 1979-1985 S, GS, and GSL came with the 12A carbourated rotary engine. The 1984-85 GSL-SE came with the 13B 6PI DEI (6 Port Induction, Dynamic Effect Intake) electronic fuel injection engine.
The 1986-88 non-turbos came with a 13B 6PI DEI Improved engine. 1989-91 had the 13B 6PI DEI-II with lighter rotors among other improvements. Non-turbos are commonly refered to as "n/a" or normally aspirated.
Turbos did not start till 1987. 1987-88 Turbos had the 13B DEI Twin Scroll Turbo. Do not be confused by the misnomer "Turbo II or TII". The "II" refers to 2nd generation, not twin turbo. 1989-91 Turbos had the 13B Independent Twin-scroll Turbo.
Another reference you will often hear is "s4" or "s5". This refers to the series of RX-7. It has generations and series. Series 1 (1979-81), series 2 (1982-1983), and series 3 (1984-85) refer to the 1st Generation. Series 4 refers to 1986-88 2nd gens and series 5 refers to 1989-91 2nd gens.
Yet another reference is "FB", "FC", and "FD". These are the first 2 letters of part numbers for RX-7 components and they correspond to the different generations. FB is 1st gen. FC is 2nd gen. FD is 3rd gen. Apparently, the RX-8 uses FE as the first two letters in its parts numbers, interesting.
