ok, I just went out and topped it off plum full of water, cranked it over without pushing the gas, it spewed water about an inch to two inches above the cap then bam it fired up without touching the gas, ran smoothly and all. Also my oil smells like gasoline. So anyone know what's up now?

Well it did it really really bad during start up, but while it was running it was just like popping up, almost like bubbles would. And once I put the cap back on it was forcing it out the nipple, to go into my resivior but it can't do that since the nipple on the housing is broken.

It sounds very much like a blown coolant seal. The signature of a blown o-ring is that the system continously spews out coolant.
When I bought my first 7, I didn't know anything about the car. Well, it turned out that the o-rings were blown. I still remember the morning at the shop I went to. They had the car sitting at the entrance to a bay. One of the young guys went over and took the rad cap off.
Now the car was NOT cold. It had been running on and off all morning. And HOLY CRAP! did the coolant ever blast out of there. The poor kid got doused and they scrambled to shut the motor off. That's when it was official - pooched o-ring.
You know what happens when you take the rad cap off of a hot motor - one shot of coolant blasts out and that's the end of it. With a blown o-ring, the motor is literally trying to pump the coolant out of the car...
Here are some more ideas to try to get a more conclusive answer:
- with the car cold and the hood up, top up the coolant and then start the car, leaving the cap off. Stay put in the driver's seat. Look through the gap below the raised hood towards the coolant filler neck.
Smoothly and quickly rev the car to 3k and hold it there for 10 seconds. Is it spewing?
You could also get out of the car after starting it and use the throttle linkage to rev the motor, but you risk getting blasted with coolant. It's up to you.
- take your 7 to an emissions testing center. Let the car sit until the motor is cool. Remove the cap. Start the car and have them stick their sensor into the coolant. If they detect hydrocarbons, you definitely have a blown o-ring.

Ok I tried your trick about starting it and taking it up to 3 thousand RPM, Yes it was spewing coolant, and at idle there were tiny bubbles forming almost small enough to make foam but not quite.
