Of course there are people on here who have installed a new clutch on their RX7.
The level of difficulty is going to depend greatly on your mechanical ability and availability of tools/workspace. The RX7 clutch is no harder than any other clutch as far as I have seen. This isn't like changing the oil though, if you have doubts about it you should have a mechanic install the clutch for you. Search for clutch install for more info.

If you want to resurface the flywheel, which you should if you want to do it right, then you need to remove the flywheel nut. You will need a 2 1/8" socket and either an impact gun or a flywheel stopper.
You will need to purchase a pilot bearing seal. When the trans is out its a good idea to replace the engine rear main seal, and the trans front and rear main seal.
Don't waste money an an 'ebay special' clutch.

Do you intend to replace the pressure plate, clutch, flywheel, throwout bearing, pinion bearing and seal?
What do you mean by anything special? Unless you are replacing the flywheel it is all pretty straight forward, even the flywheel just needs a big 53mm socket and long breaker bar to release it.

Other than a variety of tools, jacks and jack stands, a buddy to help with the trans unless you're young and strong, a pilot bearing removal tool is someting not everyone has. Heard that they can be rented from a parts store if one near you.
On some it's a nightmare as the exhuast needs to be removed and if rusted heavily it's a problem.
Do a search, buy a book and ask some questions.
Must add, if the flywheel is in good shape, no heat cracks or scores, just clean it up, rough it up with some emory cloth and you're good to go.
