Oil thicknesss and Thermostat

What weight of Oil does everyone use?
I was told that 10w 40 is what is reccomended. I have used Castrol 20w 50 all of my life in my 7's with no problems. That was in Tampa and now I live in TN. Should I go to 10w 40 for the winter?

Also what thermostat degree do you use? I was told the GSL-SE has to have the 190. If I remember right for about 2 months I drove my 87 without a thermostat when in Tampa. Can I go lower on my GSL-SE?

20w50 in the summer and 10w30 or 5w30 in the winter.
