Has anyone built a new wiring harness?
The previous owner had a new radio/amp and an alarm system installed. Whoever wired it up massacred the wiring harness. I have four years of experience in soldering and cable manufacture/repair in aviation. I was looking through the wiring diagram and I can't find anything detailing the lengths of the different wires. Has anyone ever built a new one or know where I could find a schematic for building one?

Yes, and its a **** load of work. I am almost done with mine, I used a American Autowire Power20 kit. It is a Universal kit, based on GM wire color and switch designs.
I used it along with a Haltech SPrint RE for my TII swap.

electrical experience is a MUST. I am a GM Automotive Service Technicain, and specialize in electrical repair, and it is STILL a very daunting task for me. Just the electrical work on this project has taken months.

we do have the schematics, but for lengths you can either match up the stock wires, or just run em yourself.
you will find that you only need like 8 wires going forward from the firewall, so its not a huge task
additionally the rear harness (from drivers seat back) is astoundingly light, so the factory one is actually nice.

hunt down a clean harness in a wreck and pull it? Will take hours BUT you'll have the inside track on how the whole thing installs, plus all the delicious OE connections, etc. Will need to be pretty near model-yr specific unless you are wiring AROUND a lot of the OE emissions stuff. Obv earlier cars are MUCH less complex. As you have prob found, unfortunately the Main Harness is the Dash area AND the majority of the engine compartment are all-of-a-piece, with few break-points between on most wiring.
As an alt for a rebuild, there is a company called....Beaver Electrics or Beaver Enterprises (help me here guys), Beaver Something - anyway he sells complete OE electric connector kits for earlier japanese cars (ie 80s mazdas, etc) as well as the assy tools. Have bought stuff as spares and its the real JDM deal. Google Beaver electric wiring and you should be able to find him.
